As one of Canada's earliest organic sourdough bakeries, Shasha Co., in the early days, received a grant from the National Research Council of Canada's IRAP program to study the bacterial and fungal cultures that create the sourdough starter. This groundbreaking research led to the development of exceptional sourdough products, including an organic sourdough  Ezekiel line of bread varieties, which set the benchmark for quality and digestibility.
